tangy watermelon salad

I got this free recipe from Publix. It’s simple and easy to make, and it’s vegetarian. I gave it a try today. It tasted so good, like summer time in the Mediterranean. I could smell sun, ocean and blue and white houses. It made me feel like having a vacation in Greece.

Here is the recipe.

Tangy Watermelon Salad

Ingredients
4 cups cubed seedless watermelon
2 tbsp. olive oil
3 tbsp. lime juice
1 tbsp. red wine vinegar
3/4 cup crumbled feta cheese
1/4 cup coarsely chopped fresh mint

1. Place watermelon cubes in a large bowl.
2. Whisk olive oil, lime juice and vinegar in a small bowl and pour over watermelon. Toss to coat. Add salt and pepper to taste.
3. Gently stir in feta cheese and mint. Serve salad immediately.

This salad should be served right the way. I forgot to add salt and pepper and it was still very tasty. So if you’d prefer something light, you can skip salt and pepper.

喜歡西瓜。在Publix超市發現這道免費的食譜,便想著一定要來試試看。這幾天晚上雖然還是四十幾度的低溫,可是非常想吃西瓜。我做菜不太乖乖照著食譜上標示的份量去做,材料也依自己的喜好替換,這回則是忘了加鹽和黑胡椒,結果味道還不錯呢。吃第一口,就有夏天的味道,也許是因為橄欖油、薄荷和feta乳酪,我彷彿嚐到地中海的陽光和海洋,藍頂白牆的小屋,一整個異國夏日風情。讓我忽然很想去希臘。

這裡是西瓜沙拉食譜。

材料
4杯 切成小方塊的西瓜
2大匙 橄欖油
3大匙 現榨萊姆汁
1大匙 紅酒醋
3/4 杯 碎feta乳酪
1/4 杯 稍微切碎的新鮮薄荷

1. 將西瓜放入一個大碗。
2. 將橄欖油、萊姆汁和紅酒醋放入小碗攪拌調勻,淋在西瓜上。輕輕拌一下,加鹽和黑胡椒調味。
3. 加入薄荷和乳酪,稍微拌一下,不要太用力以免把乳酪弄太碎了。立即享用。

這道沙拉必須馬上食用,不然西瓜在油醋裡泡久了,口感不好,味道也會變太酸。這是一道適合夏天的菜,清爽開胃,冷天裡吃似乎有點怪,但是實在是太爽口了,我還是忍不住吃掉了半個西瓜的份量。

美國的西瓜其實沒什麼味道,我想如果用台灣的西瓜做,一定更好吃。還可以混合黃色小玉西瓜和紅西瓜,加上綠色薄荷和白色乳酪,視覺效果更好呢。
